Searing and then baking steak that thick is tricky, to say the least. This recipe made it so simple. Our filets came out perfectly. The only changes I made were to use some steak seasoning to boost the charring a bit, and I used a carbon steel pan instead of cast iron (only because cast iron is too heavy for me to maneuver when I’m cooking a few things at the same time—arthritis!). Thank you for this beautiful recipe that erases the mystery of cooking Filet Mignon to perfection.
