I am a bit intimidated by cooking filets. Searing and then baking steak that thick is tricky, to say the least. This recipe made it so simple. Our filets came out perfectly. The only changes I made were to use some steak seasoning to boost the charring a bit, and I used a carbon steel pan instead of cast iron (only because cast iron is too heavy for me to maneuver when I’m cooking a few things at the same time—arthritis!). Thank you for this beautiful recipe that erases the mystery of cooking Filet Mignon to perfection.

I love salmon patties. I will have to try the croquettes sounds great and l haven’t baked any patties. Looks delicious!
