This simple one-pan dinner of roasted chicken, shallots, and cherry tomatoes gets an upgrade with a splash of Grappa, a liqueur that has subtly sweet and fruity undertones. The combination creates a rich, aromatic pan sauce.

What’s Grappa, you ask?

Grappa is an alcoholic beverage: a fragrant, grape-based pomace brandy of Italian origin that contains 35 to 60 percent alcohol by volume (70 to 120 US proof).

The flavor of grappa, like that of wine, depends on the type and quality of the grapes used, as well as the specifics of the distillation process. Grappa is made by distilling the skins, pulp, seeds, and stems (i.e., the pomace) leftover from winemaking after pressing the grapes. It was originally made to prevent waste by using these leftovers.

The aroma of the Roasted Chicken Thighs that will fill your house while you are making this dish is unbelievable! This chicken is made with a perfect combination of flavors for a juicy and flavorful dinner. It is so easy to make too and will take you about an hour for prep and cooking. This dish requires minimal effort and most of the cooking time goes into it roasting away in the oven. You can serve this chicken with a side of potatoes, rice, veggies or by itself, how I like to serve it.

The simple ingredients consist of: Chicken thighs, Basil, Cherry tomatoes, 4 Shallots Lemon juice, Fennel seeds and some type of flavored liqueur. You can always change it up to what you have at hand at home if you can’t go get the exact kind of liqueur I used, no worries just substitute.

You will need an oven proof skillet or an oven proof baking dish. If you use a baking dish, you don’t have to alter any time or temperature. Time for baking would depend on the size of your chicken thighs. If you are using large and plumpy ones, you would have to make sure that they had enough time to bake all the way through.

The chicken and tomatoes will produce plenty of juice, which you can use for dipping crusty bread, or reduce further and serve as a sauce over the chicken. Both ways are absolutely delicious!

Easy Roasted Chicken Thighs

Ingredients

  • 6 bone-in, skin-on chicken thighs (about 2 ½ pounds total)

  • Kosher salt and freshly ground pepper

  • ¼ cup grappa or other anise-flavored liqueur

  • 1 tbsp fennel seeds, crushed with the bottom extra-virgin olive oil

  • ¼ cup fresh lemon juice

  • 4 shallots (8 ounces total), halved lengthwise, or quartered if large

  • 12 ounces cherry tomatoes on the vine

  • ¼ cup fresh basil leaves, for serving

Directions

  • Season chicken generously with salt and pepper. Let stand at room temperature for 30 minutes
  • Preheat oven to 400 degrees with a rack in center. Whisk together with Grappa, fennel seeds, olive oil, and lemon juice. Arrange shallots and tomatoes in a large roasting pan; season with salt and pepper. Add chicken; drizzle with Pernod mixture. Toss to coat, then arrange chicken skin side up.
  • Roast until chicken is golden and tender, 40 to 45 minutes. Switch oven to broil; cook until skin is very crisp and vegetables are lightly charred, 2 to 3 minutes more.
  • Transfer chicken and vegetables to a serving platter. Pour a pan Juices into a small saucepan. Si fat, then reduce over medium high heat until slightly thickened, about 2 minutes. Drizzle sauce around chicken, garnish with basil, and serve.
