Fish Tuesday: Swain Fish with Cherry Tomatoes, Tangerines, and Capers

I’m always on the hunt for a new fish recipe and this Swain Fish with Cherry Tomatoes, Tangerines and Capers is so worth the short time to throw this mouthwatering recipe together. This easy to prepare Swain fish recipe is not only healthy but is also art in a pan. The richly flavored cherry tomatoes complement the sweet tangerines and when combined with capers, rosemary and thyme give this dish a traditional Mediterranean twist of flavors. It just dawned on me that this deliciously healthy recipe, which has been featured in 360 magazine, had never been posted on my site! So here it is for my true core audience to enjoy.

I love presenting a “Wow” dish that is quick and easy to create, punches a lot of flavors and completely satisfies the palate. This Swain fish dish is so delicious it might not make it to a plate as you’ll be tempted to eat it straight from the pan!  I’ve been humping it since my kids started back to school and all our work projects are in demand of my time but I’ve been working on some new food regimes which will be coming to you shortly!

Don’t forget to pair this dish with a crisp, medium-bodied Pinot Grigio or Sauvignon Blanc.

Life is all about reinventing and adapting to new possibilities! Stay open to your possibilities!
