I’m always on the hunt for a new fish recipe and this Swain Fish with Cherry Tomatoes, Tangerines and Capers is so worth the short time to throw this mouthwatering recipe together. This easy to prepare Swain fish recipe is not only healthy but is also art in a pan. The richly flavored cherry tomatoes complement the sweet tangerines and when combined with capers, rosemary and thyme give this dish a traditional Mediterranean twist of flavors. Ali in the Valley
Ingredients
- 2 teaspoons olive oil (divided)
- 4 5-ounce Swain fillets (or other white fish)
- 1 tablespoon of butter (4 slices)
- 1 cup cherry tomatoes
- 2 tangerines (peeled)
- 2 tablespoons capers
- ¼ teaspoon of chopped herbs (rosemary, thyme, parsley)
- 1 lemon (juiced)
- Salt and pepper
Directions
- In a large nonstick skillet, heat butter slices individually placing fish fillets on top.
- Add cherry tomatoes, tangerines, capers, chopped herbs, lemon juice, salt and pepper and drizzle olive oil on top.
- Place the whole pan in oven at 400 degrees for 15 minutes. Serve immediately.
