It’s time for Summer Rice Salad!

It’s summer time fun all day long! We’re relaxing by the pool and enjoying healthy and yummy food. I love this Summer Rice Salad recipe because it’s all about leftover food in my refrigerator that I use to make this easy dish! When I cook rice, I usually cook brown rice and I make a little extra for this recipe.  I always have extra veggies in my refrigerator or in my garden so I add what veggies I have on hand.

Ali in the Valley

Ingredients

  1. 1 cup of cooked Brown Rice
  2. 1 cup of sweet peppers chopped
  3. 1 cup of cucumber chopped
  4. 1 cup of carrots chopped
  5. 1 cup of green onions chopped
  6. ½ cup of parsley finely chopped
  7. ½ cup of cilantro finely chopped
  8. ½ cup of cranberries
  9. 1/2 cup of fresh lemon juice
  10. ½ cup of extra virgin olive oil
  11. Salt and pepper to taste

Instructions

Toss together rice and above ingredients (or whatever veggies are in your refrigerator) and drizzle with dressing made with equal parts lemon juice and olive oil.
