I love these yummy Lettuce Cups which are filled to the brim with Italian Chicken Sausage. I’m such a sucker for all lettuce wraps and why not? They’re healthy, tasty and super easy to throw together in a few skilled minutes, which is the theme in my life, right now! They are so low in carbs so I become a bottomless pit, stuffing my face without any kind of guilt. I kid you not! This is the easiest, quickest meal you could ever make. And if you’re quick in the kitchen, you could even get this on the dinner table in less than 15 minutes. Plus, it’s budget-friendly and you can easily double or triple the recipe as needed. What more could you ask for? Well, I could think of a few more things to ask for but…lol!

Ingredients
- 2 T coconut oil or extra virgin olive oil
- ½ yellow onion chopped
- 1 lb. ground Italian chicken sausage
- salt and pepper to taste about !/2 t each
- 2 T parsley chopped
- 2 T fresh sage chopped
- 1 T thyme chopped
- 2 garlic cloves minced
- 2 radishes finely sliced
- your favorite lettuce for wraps
- your favorite hot sauce
Directions
- In a large skillet, sauté onions in the coconut or olive oil add the ground sausage, and salt and pepper cook until sausage is no longer pink
- Add parsley, sage and thyme, allow to cook 4-5 minutes
- Add the garlic and allow to cook until warm
- Serve with lettuce to wrap filling in
- Add sliced radishes and hot sauce.
