Skillet-Poached Eggs with Spinach

We love eggs here in our casa and this Skillet-Poached Eggs with Spinach is a unique twist on how to enjoy your eggs. The flavor of spinach matched with sautéed green onions and garlic in chili oil baked with eggs and finished with a few crushed red pepper flakes makes you feel like you’re dining in a fancy restaurant instead of your own home kitchen.

Skillet-Poached Eggs with Spinach is my first conscious attempt at a paleo breakfast recipe…and yes the kids ate and enjoyed this as well. The Paleo Diet or “Caveman” diet is all the rage right now with fitness, weight loss and food regime experts. What’s the paleo diet you ask?  The paleolithic diet also popularly referred to as the Caveman diet, Stone Age diet and Hunter-Gatherer diet, is a modern nutritional plan based on the presumed ancient diet of wild plants and animals that various hominid species habitually consumed during the Paleolithic era—a period of about 2.5 million years which ended around 10,000 years ago with the development of agriculture and grain-based diets. In common usage, the term “paleolithic diet” can also refer to actual ancestral human diets, insofar as these can be reconstructed. Centered on commonly available modern foods, the contemporary “Paleolithic diet” consists mainly of fish, grass-fed pasture raised meats, eggs, vegetables, fruit, fungi, roots, and nuts, and excludes grains, legumes, dairy products, potatoes, refined salt, refined sugar, and processed oils.

As you know, food and drinks are my passion.  I love bread, pasta, cheese and everything else that tastes oh-so-yummy but I usually eat the decadent stuff within reason and want to drop a few pounds. I workout 4 to 5 days a week doing a mixture of Cardio Barre, Barry’s Bootcamp, and our Elliptical but at my age it’s extremely hard to lose any weight. So it’s time to try the Paleo diet to shed 10 pounds. I’ll be sharing a few of my different versions of Paleo recipes that I think you might like and that I’ll be eating during my new food regime. Don’t worry, my kids will still be eating pasta, pizza and bread and I’ll continue to post those as well but my husband and I have decided to give it a try for a while so here we go! Wish me luck! Ali in the Valley

Ingredients

  1. 1 garlic clove (halved)
  2. Kosher salt
  3. 2 tablespoons olive oil (chili oil)
  4. 2 tablespoons chopped scallion (white and pale-green parts only)
  5. 10 cups fresh spinach (10 ounces)
  6. 1 teaspoon fresh lemon juice
  7. 4 large eggs (organic)
  8. 1/4 teaspoon crushed red pepper flakes and a pinch of paprika
  9. 1 teaspoon chopped fresh oregano

Directions

  1. Heat skillet with oil, add scallions and garlic; reduce heat to low. Cook until soft, about 10 minutes.
  2. Add spinach and lemon juice; season with salt. Increase heat to medium-high; cook, turning frequently, until wilted, 4–5 minutes.
  3. Make 4 deep indentations in center of spinach in larger skillet. Carefully break 1 egg into each hollow, taking care to keep yolks intact.
  4. Cover skillet until egg whites are set, 5 minutes.
