Skillet-Poached Huevos Rancheros

Skillet Poached Huevos Rancheros is one of my family’s all time favorite brunch recipe.  This recipe is easy to make and absolute yummy! All the ingredients you need are black beans, salsa, eggs, cilantro, avocado and lime juice.

This is one of my favorite “breakfast for dinner” meals and it’s pretty darn good for brunch too!  It can be made in less than 30 minutes, and it’s perfect for company or lazy weekend brunches. I’ve made this many of times on my blog and instagram but here’s the video to show just how it’s so easily done. 

Huevos Rancheros is a Mexican farm dish that translates basically as ‘rancher’s eggs’. There are a lot of variations, but the essential elements seem to be a cooked in a tomato-type salsa with eggs, which can be fried.

This is my one pan version that can be cooked in a skillet or Dutch oven, where the eggs are poached in the tomato salsa.

Personally, I like to eat them as is, pretty much straight out of the pan. The Skillet Poached Huevos Rancheros can also be served with other Mexican traditional elements such as on tortillas, and topped with guacamole or sour cream.

Skillet-Poached Huevos Rancheros is not only flavorful and hearty, this vegetarian version is surprisingly healthy, too. To boost nutritional value, add stray veggies from your refrigerator drawers.

Our weekend mornings often start off slow around here with breakfast sometimes morphing into the lunch hour. By the time we’ve gotten around to it, it’s already noon and we’re starving.  This tasty Huevos Rancheros is loaded with complex carbohydrates, protein, and healthy fats, making it a balanced meal that’s also teeming with antioxidants. Make some for lunch or enjoy it first thing in the morning as a decadent breakfast meal.
