Wondering what to do with that can of hearts of palm? This tangy hearts of palm salad is fresh, light and really out of the ordinary. It’s loaded with fresh citrus and a simple citrusy vinaigrette. Make this as a starter salad to a special meal.

If you’ve never tried hearts of palm, it actually IS the heart of a palm tree. The harvesting process is laborious, so this creamy, mild vegetable is considered a delicacy, but it’s not priced as aggressively as caviar or truffles.  In fact, it’s nowhere near that!  My can was just over $3.

Since it’s such a mild, delicate flavor, hearts of palm work very well in salads.  I like them with fresh orange segments to really amplify that tropical flavor.

Hearts of palm is becoming more popular here in America. It is super fresh and easy, only takes a few minutes to get whipped up and you can prepare it ahead and chilled before serving. I love to serve it with a steak but it is great whatever you serve it next to. It is vegan, gluten free, Whole30, low carb, and totally perfect for summer evenings but anytime of the year.

Easy to make in 15 minutes, light and refreshing this Tomato and Hearts of Palm Salad  is a perfect side salad or just as good all by itself. I love hearts of palms and this salad won’t disappoint you. So light and healthy too!

This light and healthy tomato and hearts of palm salad takes just 15 minutes 

Ingredients

  • 3 cups cherry tomatoes , sliced in half

  • 1 15- ounce can hearts of palm , drained and sliced into ¼ inch rings

  • ¼ cup red onion , thinly sliced or shaved

  • ¼ cup Italian parsley , chopped

  • ¼ cup vegetable oil

  • 1 ½ tablespoon red vinegar

  • 1 teaspoon sugar

  • 1 teaspoon kosher salt

  • ½ teaspoon freshly ground black pepper

Directions

  • Combine tomatoes, hearts of palm, red onion and parsley in a large bowl. In a small bowl, mix the vegetable oil, vinegar, sugar and salt and pepper until sugar is dissolved. Pour vinaigrette over tomato mixture and gently mix. Add more salt and pepper to taste. Serve at room temperature.
