Ingredients:
- 8 oz spaghetti or linguine
- 1 lb large shrimp, peeled and deveined
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 1/2 cup chicken broth (or white wine)
- 1/4 cup grated Parmesan cheese
- 1/2 tsp red pepper flakes (optional)
- Salt and black pepper to taste
Directions:
- Cook pasta according to package instructions until al dente. Reserve 1/2 cup pasta water, then drain.
- In a large skillet, heat olive oil over medium heat. Add shrimp, season with salt and pepper, and cook 2-3 minutes per side until pink. Remove from skillet and set aside.
- In the same skillet, add garlic and sauté until fragrant, about 1 minute. Add cherry tomatoes and cook until softened, about 3-4 minutes.
- Stir in chicken broth (or white wine), scraping up any browned bits from the bottom of the skillet. Let simmer for 2 minutes.
- Add spinach and cook until wilted, about 1 minute. Return shrimp to the skillet, and toss to combine.
- Add cooked pasta to the skillet, tossing everything together. Use reserved pasta water to loosen the sauce, if needed.
- Sprinkle with Parmesan cheese and red pepper flakes (if using). Serve warm and enjoy!
