What You’ll Need:
- 2 lbs Yukon gold potatoes, peeled and chopped into chunks
- 2–3 hard-boiled eggs, chopped
- ½ cup dill pickles, chopped
- ⅓ cup red onion, finely diced
- ¼ cup fresh dill, chopped
- ½ cup mayonnaise
- ⅓ cup sour cream
- 2 tbsp Dijon mustard
- 2 tbsp pickle juice
- ½ tsp garlic powder
- ¼ tsp celery seed
- Salt and black pepper to taste
Directions:
- Boil the Potatoes:
Place the chopped Yukon gold potatoes in a large pot of cold, salted water. Bring to a boil and cook for 10–12 minutes, or until the potatoes are fork-tender. Drain and let them cool completely. - Make the Dressing:
In a large mixing bowl, whisk together the mayonnaise, sour cream, Dijon mustard, pickle juice, garlic powder, celery seed, salt, and black pepper until smooth and well combined. - Assemble the Salad:
