Recipe Rewind: Fresh Tomato & Hearts of Palm Salad

Sometimes the simplest recipes are the most delicious. This Tomato & Hearts of Palm Salad is one of my go-to sides because it’s fresh, vibrant, and comes together in minutes. Sweet tomatoes, tender hearts of palm, and a zesty vinaigrette make it the perfect light salad for lunch, a potluck, or as a side to grilled meats or seafood.

It’s healthy, colorful, and so easy — the kind of recipe you’ll want to make on repeat.

Ingredients

  • 4 medium ripe tomatoes, sliced
  • 1 can (14 oz) hearts of palm, drained and sliced into rounds
  • ½ small red onion, thinly sliced
  • ¼ cup fresh parsley or basil, chopped
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp red wine vinegar (or apple cider vinegar)
  • 1 tsp Dijon mustard
  • ½ tsp salt
  • ¼ tsp black pepper

Directions

  1. In a large salad bowl, arrange sliced tomatoes and hearts of palm.
  2. Add in thinly sliced red onion and fresh herbs.
  3. In a small bowl, whisk together olive oil, vinegar, Dijon mustard, salt, and pepper.
  4. Drizzle dressing over the salad and toss gently to combine.
  5. Serve immediately or chill for 15 minutes before serving for extra flavor.
