Sometimes the simplest recipes are the most delicious. This Tomato & Hearts of Palm Salad is one of my go-to sides because it’s fresh, vibrant, and comes together in minutes. Sweet tomatoes, tender hearts of palm, and a zesty vinaigrette make it the perfect light salad for lunch, a potluck, or as a side to grilled meats or seafood.
It’s healthy, colorful, and so easy — the kind of recipe you’ll want to make on repeat.
Ingredients
- 4 medium ripe tomatoes, sliced
- 1 can (14 oz) hearts of palm, drained and sliced into rounds
- ½ small red onion, thinly sliced
- ¼ cup fresh parsley or basil, chopped
- 3 tbsp extra-virgin olive oil
- 2 tbsp red wine vinegar (or apple cider vinegar)
- 1 tsp Dijon mustard
- ½ tsp salt
- ¼ tsp black pepper
Directions
- In a large salad bowl, arrange sliced tomatoes and hearts of palm.
- Add in thinly sliced red onion and fresh herbs.
- In a small bowl, whisk together olive oil, vinegar, Dijon mustard, salt, and pepper.
- Drizzle dressing over the salad and toss gently to combine.
- Serve immediately or chill for 15 minutes before serving for extra flavor.
