Friday’s cocktail is a Limoncello Cocktail! So refreshing and tasty that sometimes I forget I’m drinking alcohol because it tastes like lemon candy! It’s been a very productive week here in our household and I’m quietly celebrating a few amazing steps forward. Sorry to be so secretive…but soon I’ll be able to shout it from the rooftops and let you know about some projects we’ve been working on for years (and I do mean years) that are coming to fruition! Life is challenging but remember, never ever give up on your dreams! So in chilled out celebration of never, ever giving up, I’m making one of my all time favorite cocktails: my version of the very famous Italian Limoncello! Limoncello is perfect for a hot Friday night cocktail and who doesn’t need a cool drink at the end of long week? I know I do!
Here is Ali in the Valley’s twist on the delicious Italian liqueur, Limoncello. This lemon vodka drink is extremely refreshing and very potent! Blend the sugar, lemons and vodka and keep in a bottle in the refrigerator, ready for pouring over crushed ice or top it off with soda or sparkling water. It’s absolutely delicious!

Ingredients
- 10 large lemons
- 1 1/4 cup of sugar superfine
- 1 cup of Vodka Ketel One or your preference
- Ice cubes
Instructions
Juice lemons with a juicer. Pour the juice into a pitcher, add the sugar and whisk well until all the sugar has dissolved.
Strain the sweetened lemon juice into a clean bottle or narrow necked jar and add the vodka. Shake the mixture well to combine, and chill for 4 hours or up to 2 weeks.
To serve, fill glasses with ice and pour the lemon vodka in or mix in a shaker with ice.
