Apple Pear Salad

Here’s a simple Apple Pear Salad with Agave or Honey Cilantro Vinaigrette.  This salad is a perfect springtime salad on top of that it’s super delicious and easy to make.  One of the best parts about this salad is that the dressing is made in the blender. I used cilantro leaves and lime juice to bring in some bright flavors that are often used in Mexican cooking and balanced it all out with some agave or honey for a touch of sweetness. To make this quick and easy Apple Pear Salad just throw all of the ingredients for the vinaigrette into the blender and pulse until the cilantro is chopped to your liking.

Luckily, with a few simple ingredients, Apple Pear Salad is made with kale and is absolutely one of the easiest dishes to make at home! Have you ever tried growing kale? It’s so easy to grow and last year I planted kale and it just keeps on growing in my Vegepod.  I just pick the kale when I need it.

I honestly cannot tell you how absolutely delicious the tangy agave cilantro vinaigrette tastes along with the kale and the apples, pears and walnuts! This raw kale salad was the perfect lunch salad, but I am definitely planning on making a double batch if I’m bringing it to a friend’s house!
