Quick and Easy Tostadas

One of my go-to dinners when I need something QUICK and easy is homemade Tostadas made with refried beans, and cheese. They’re so fresh and tasty and a meal that everyone gets excited for.

Quick and Easy Tostadas

Ingredients

  • 10 tostada shells

  • 1 can Refried Beans

  • 1/2 head lettuce , finely chopped

  • Cheddar cheese or queso fresco (or other cheese)

  • 1 large avocado or gucamole

  • 10 cherry tomatoes (cut in halve)

  • Salsa, pico de gallo or salsa verde

  • Sliced jalapenos

  • Favorite hot sauce

Directions

  • Bake or Fry the corn tortillas, if not using store bought tostada shells.
  • Add the refried beans to a microwave safe bowl, or a small skillet over medium heat. Cook till warm.
  • Assemble the tostadas: Spread a thin layer of refried beans over the tostada shell. Top with a lettuce, cheese, avocado, salsa, sour cream and hot sauce.
  • Serve immediately.

To make ahead: Have everything prepped and stored separately in the fridge. When ready to eat, re-warm the beans and assemble the tostadas. tag #aliinthevalley
