Baked Chicken Thighs!

My all time favorite yummy Baked Chicken Thighs with Kalamata Olives,Tomatoes, Red Peppers, Garlic, Rosemary and Thyme. This is an easy baked chicken recipe that is filled with flavor and spice!  Tender juicy chicken with my kick-ass essence seasoning are baked with tomatoes, olives, roasted red peppers, garlic and herbs for a warm and comforting dish easy enough for a weeknight, but fancy enough for company! 

This dish is my version of a Spanish Chicken recipe and add a touch of Mediterranean flare to your dinners! I used Spanish paprika in my seasoning flavored then they are braised in a rich and tangy tomato sauce along with roasted red peppers and olives. Serve with rice and or a simple salad.

This recipe is not an authentic recipe. I should really call it Spanish-style chicken. But it does incorporate tons of gorgeous ingredients used in Spain. Do they ever come together in a recipe like this? I have no idea as it is my own creation but it’s packed with flavor.

The chicken thighs are rubbed with my Essence which includes smoky Spanish paprika, then all mixed in one clay pot and all the other ingredients are added. For the final step, the chicken thighs are braised in the sauce in the oven until they are crispy on the outside and melt-in-your-mouth tender on the inside. 

The perfect one pot meal!

Ingredients

  • 1 tbsp olive oil

  • 8 chicken thighs

  • Essence

  • 6 cloves garlic sliced

  • 2 fired roasted red pepper sliced

  • 2-3 sprigs fresh thyme or 1 tsp dried thyme

  • 8 chopped tomatoes

  • 1/2 cup black kalamata olives 

  • 2-3 sprigs flat leaf rosemary

Directions

  • Preheat oven to 375F
  • Add olive oil to pan ( i used lemon flavored)
  • Sprinkle chicken thighs with essence on both sides then add the olives, tomatoes, red peppers, rosemary, garlic, thyme.
  • Remove lid after 20 minutes to brown and spoon juices over chicken back in oven till browned.
  • Remove stems of rosemary and thyme
  • Serve hot
