These Mini Sweet Pepper Poppers are the perfect appetizers for parties and family gatherings. Ready in 20 minutes this oven baked party food is easy to make and tastes amazing! These are stuffed with an amazing mixture of artichoke and jalapeño dip(Trader Joes) and can be baked or not (your choice)! So quick and easy to make.

I just love those little bags of mini peppers you get from the grocery store? They make a delicious quick snack with some any kind of dip, or as a quick veggie side appetizers. Whenever I see them on sale I pick up a bag (or two). Occasionally I will have a busy week and end up with quite a few of them in the veggie drawer. If it’s just a few I’ll chop them up and sprinkle them on our weekly homemade pizza, but if you have more you may want to make these delicious stuffed peppers!

Ingredients

  • 1 large bag sweet mini peppers (I buy the 2 pound bag)

  • 1 package of Artichoke & Jalapeño Dip

  • Sea Salt

Directions

  • Preheat the oven to 400°F/200°C.
  • Remove the dip from the fridge and let it sit at room temperature for about 10 minutes.
  • Rinse the peppers and cut each of them in half. Make sure to leave the green parts on. Remove the seeds and membranes.
  • Fill the peppers with the mixture and bake for 15 minutes or until heated through and the peppers are soft.
  • Top with Sea Salt
  • Best served right away
