I recently made this while hosting at home (because let’s be honest, that’s usually when I decide to try something new 😅), and it ended up being one of those dishes that’s simple, flavorful, and just feels good to eat.
It’s light but still satisfying, with creamy coconut milk, fresh lime, and a little kick from red curry. And the best part? It comes together quickly and doesn’t require anything complicated.

1 lb white fish fillets (cod, halibut, or tilapia)
1 tbsp olive oil
1 small onion, diced
2 garlic cloves, minced
1 tbsp fresh ginger, minced
1 tbsp red curry paste
1 can (14 oz) coconut milk
2 cups chicken or vegetable broth
1 tbsp fish sauce
- Optional: splash of clam juice (for extra depth)
Juice of 1 lime
Salt and pepper, to taste
Fresh cilantro (for garnish)
Lime wedges (for serving)
Directions
- Build the base
In a large pot, heat olive oil over medium heat.
Add the diced onion and sauté for about 3–4 minutes until softened.
Add garlic and ginger, and cook for another minute until fragrant. - Add flavor
Stir in the red curry paste and let it cook for about a minute.
(It has a little kick—so adjust to your taste.) - Add liquids
Pour in the coconut milk and broth, stirring to combine.
Bring everything to a gentle simmer. - Add the fish
Gently place your fish into the pot.
Let it simmer for about 8–10 minutes, or until the fish is cooked through and flakes easily. - Finish the soup
Stir in fish sauce, lime juice, and (optional) a splash of clam juice for extra depth.
Taste and adjust seasoning with salt and pepper as needed. - Serve
Ladle into bowls and top with fresh cilantro and lime wedges.

Notes
Cod works beautifully because it flakes into the broth, but any white fish will work- Add more curry paste if you want more heat.
- The lime at the end is key—it brightens everything up
- This is even better the next day
