Zesty Lemon Sardine Pasta

- For the pasta:
8 oz pasta (spaghetti or linguine)
- For the sardine mixture:
1 can (4 oz) sardines in olive oil
1 tbsp olive oil
2 cloves garlic, minced
Zest and juice of 1 lemon
¼ tsp red pepper flakes (optional)
- For seasoning & garnish:
Salt & black pepper to taste
Fresh parsley, chopped
Grated parmesan (optional)
Directions
- Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve about ½ cup of pasta water, then drain.
- In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1–2 minutes.
- Add sardines, gently breaking them apart. Cook for another 2–3 minutes until warmed through.
- Stir in lemon zest, lemon juice, and red pepper flakes. Mix well.
- Add the cooked pasta to the skillet, tossing everything together. Use a bit of reserved pasta water if needed to loosen the sauce.
- Season with salt and pepper to taste.
- Finish with fresh parsley and grated parmesan, if desired.
