This Cucumber Gin Spritzer is a refreshingly light and easy to make cocktail! Lime and seltzer go perfectly with the cucumber and gin, and it has a touch of sweetener to bring it all together. It’s perfect for any hot afternoon.
This drink is great for the late spring and summer months, which is cucumber season. You’ll get the best tasting cucumbers at this time of year. Plus, cucumbers just make a cold drink taste colder for some reason!!
- Gin – I used Hendrick’s Gin here, since it has cucumber and rose flavors that go perfectly in this drink.
- Fresh cucumber – look for a dark green cucumber with no soft spots.
- Fresh Mint– gives a fragrant flavor.
- Lime juice – preferably freshly squeezed.
- Honey – I used my honey but you can also use simple syrup or you can also use store bought syrup.
- Tonic Water or Seltzer – any sparkling water will work great in this drink. Try to use a freshly opened seltzer for the best bubbles!

3-5 slices fresh cucumber
3 -5 fresh mint (diced)
1 ounce lime juice
1 ounce honey or simple syrup
1½ ounces gin
3 ounces of tonic water
sugar to rim the glass
Directions
- Add your chopped cucumber slices and mint to your cocktail shaker. Use a muddler to break up the cucumber and mint so that the juices come out.
- Add your honey or simple syrup and gin.
- Fill the cocktail shaker with ice, seal it up and give it about 15-20 good shakes.
- Rim glass with lime and sugar
- Fill the serving glass with fresh ice, and strain the drink into the glass. If possible, use two strainers (one regular and one fine-mesh) together.
- Top the drink with seltzer.
- Garnish with Cucumber slices and mint
