One of my go-to dinners when I need something QUICK and easy is homemade Tostadas made with refried beans, and cheese. They’re so fresh and tasty and a meal that everyone gets excited for.

Skillet Poached Huevos Rancheros

Skillet Poached Huevos Rancheros is one of my family’s all time favorite brunch recipe.  This recipe is easy to make and absolute yummy! All the ingredients you need are black beans, salsa, eggs, cilantro, avocado and lime juice.

The Best Guacamole Ever

I could literally add guacamole to almost anything and it always makes it better. Save this recipe, because I am positive it will become one of your favorites too!

Spicy Shrimp Tacos

Spicy Shrimp Tacos are my idea of a cuisine Shangri-La! Quick and easy to prepare accompanied with a flavorful Corn Bean Salad, which can be made ahead of time and re-used for a variety of different meals and because the Corn Bean Salad is made in advance it cuts down on precious time.

Ceviche is the perfect Summertime spicy, Latin, no-cooking dish that anyone can make in a hurry or for a great party! That’s right, even you can make it!

Paloma

The Paloma is a Mexican favorite cocktail. Made with grapefruit juice and silver tequila the Paloma is arguably more refreshing than a Margarita.

Strawberry Jalapeno Margarita

These are sweet from the strawberries, a little spicy from the jalapeño and the perfect refreshing cocktail after a long week!! The recipe below serves 2, but you can easily batch these up and make them ahead of time if serving a crowd. Just make sure to give the mixture a stir before pouring so you ensure the alcohol is evenly combined!

Rosé Margarita

I’m a believer in drinking rosé year-round, but especially in the summertime. I’m all for finding new ways to enjoy a fave, so I was definitely interested in a yummy rosé cocktail idea.  Even if you’re not a fan of rosé, I’d recommend giving this one a shot, I think you’ll be surprised.

Skinny Margarita in a Mason Jar

Fast and totally refreshing! These easy Mason Jar Margaritas are assembled over ice right in the jar – just pour, shake, and drink! Try mixing up cocktails in advance and storing them in Mason or canning jars. They can easily be tossed into a tub with ice to keep cold and there’s no fuss.

Cinco de Mayo Margarita

Ali in the Valley’s Margarita Recipe is one of my best! I got this recipe from one of my mentors in the music business and have claimed it as my own (with a few changes of course). Since I’ve been on the grind this year and not drinking hard liquor, I haven’t really indulged much. But heck, I gotta celebrate Cinco de Mayo the right way with my amazing margaritas!
