This week, I’m sharing not one but two recipes that reflect the spirit of renewal and balance: my Carrots with Mint Tahini and classic Cornish Hens. These dishes are perfect for bridging the festive and the fresh, ideal for lingering family meals or quiet dinners as you set your intentions for the year ahead.
Carrots with Mint Tahini: A Vibrant Side Dish
Let’s start with the carrots. Roasted to caramelized perfection, these beauties are drizzled with a creamy mint tahini sauce that’s as refreshing as it is indulgent. The mint adds a bright, unexpected twist, making this side dish an instant favorite. It’s simple to prepare and naturally gluten-free, making it a versatile addition to any table.

For the main course, my Cornish Hens are a show-stopper. These tender, perfectly roasted hens are seasoned to perfection and just the right size for an intimate meal. Cornish Hens

2 Cornish hens
2 tablespoons olive oil
1 tablespoon Ali in the Valley Essence Seasoning (or your favorite poultry seasoning)
1 lemon, quartered
4 sprigs of fresh thyme
½ cup chicken broth
Directions
- Preheat your oven to 375°F (190°C).
- Rub the hens with olive oil and season them generously with Essence Seasoning.
- Stuff each hen with a lemon quarter and a sprig of thyme.
- Place the hens in a roasting pan, breast side up, and pour chicken broth into the bottom of the pan.
- Roast for 50-60 minutes, basting occasionally, until the hens are golden brown and the internal temperature reaches 165°F (74°C).
- Let rest for 10 minutes before serving.
