Ingredients:
- 2 ½ cups flaked wild-caught salmon (bones & skin removed)
- 1 cup Panko bread crumbs
- 1 large egg, whisked
- 1 clove garlic, minced (or ½ teaspoon garlic powder)
- 2 tablespoons chopped fresh chives (or ¼ teaspoon onion powder)
- 2 tablespoons finely diced red bell pepper
- 2 tablespoons mayonnaise
- 1 tablespoon chopped fresh parsley
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh lemon juice
- 2 teaspoons lemon zest
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper
- 3 tablespoons olive oil, divided
Instructions:
- Prep: Preheat oven to 425°F. Line a baking sheet with parchment paper.
2. Mix: In a large bowl, combine salmon, breadcrumbs, egg, garlic, chives, bell pepper, mayo, parsley, mustard, lemon juice, zest, salt, and pepper. Mix well.
3. Shape: Scoop about ¼ cup of mixture per patty and gently form into 9 croquettes.
4. Bake: Place on a baking sheet, brush with 1 tablespoon olive oil, and bake for 13-15 minutes until golden brown.
