Chopped Peach Caprese Salad

Spring is warming up, and I’m already dreaming of the fresh, juicy flavors that come with the season ahead. This Chopped Peach Caprese Salad is the perfect bridge between crisp spring days and that easy summer vibe. Sweet peaches, ripe cherry tomatoes, fragrant basil, and creamy mozzarella pearls come together with a honey-balsamic dressing that’s as bright as the season itself.

Whether you’re brunching al fresco, meal prepping for the week, or just craving something light and flavorful, this one hits all the right notes.

Ingredients:

  • 2 ripe peaches, pitted & cut into cubes
  • 2 cups cherry tomatoes, halved
  • 1½ cups fresh chopped basil leaves
  • 8 oz container of mozzarella pearls, drained
  • ¼ cup olive oil
  • 2 tbsp balsamic vinegar
  • 2 tbsp honey
  • Salt and pepper to taste
  • Optional: balsamic glaze for topping

Directions:

  1. In a large mixing bowl, combine the peaches, cherry tomatoes, basil, and mozzarella pearls.
  2. In a separate bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. For an extra touch, drizzle with balsamic glaze before serving.

Tip: For a lighter dressing, consider serving it on the side, allowing guests to add as much or as little as they prefer.​
